350gm Penne (I used spiral pasta as that's what I had on hand)
250gm green beans (original recipe suggested broccoli)
100gm thickly sliced boneless leg ham, cut into strips
2 tsp Dijon mustard
1/2 cup who egg mayonnaise
salt & freshly ground pepper
1 stalk spring onion (original recipe suggested 2 Tbsp snipped chives)
- Cook the pasta in large pan of boiling salted water according to packet directions until al dente, adding beans towards the end of cooking time to boil for a few minutes until tender.
- Drain together and refresh under cold running water.
- Combine the ham, pasta and beans in a dish.
- Mix the mustard and mayonnaise in a small bowl and season to taste. Fold the mayonnaise through the salad and scatter with the spring onion.
